When Conant was 15 years old, he joined W.F. Kaynor Technical High School to study cooking, and later went on to the Culinary Institute of America. He started cooking early – he signed up for community college cooking classes when he was just 11 years old. While studying at the Culinary Institute of America, Conant has an internship with San Domenico in New York – this greatly shaped his career.
Professional Career
After graduating from Culinary Institute of America, he spent 1 year in Munich learning pastry at ‘Hotel Bayerischer Hof’. Then, he returned to San Domenico as a sous chef. In the year 1995, Conant became chef de cuisine at Il Toscanaccio – he later became executive chef at City Eatery in NYC.
In September of the year 2002, Conant launched “L’Impero” in Tudor City. The restaurant quickly earned a glowing 3-star review from ‘The New York Times’ – this was for praising his flavorful and well-crafted dishes. His pasta became a standout, – it landed on the cover of “Food & Wine” that later named him one of America’s “Best New Chefs” in the year 2004.
In the year 2003, ‘L’Impero’ won top awards from the James Beard Foundation – this included “Outstanding Design” and “Best New Restaurant”. That same year, Conant appeared on the cover of ‘Gourmet’ and was praised by Ruth Reichl (famous editor) as among her favorite NYC chefs.
