Soffer started his acting career when he was six years old when he got a Kix cereal commercial. In 1993 at age 8, he made his first appearance in film with Cathy Moriarty and John Goodman in the comedy Matinee. He co-starred in the drama Safe Passage in the role of Percival in 1994. Soffer also co-starred in the comedy The Brady Bunch Movie as Bobby Brady in 1995, and then reprised his role a year later in A Very Brady Sequel. Soffer starred as Jamie Kincaid, a runaway-turned-sleuth in the television movie From the Mixed-Up Files of Mrs. Basil E. Frankweiler carrying on the pattern of working with A-list talent and Oscar-calibre.

Soffer worked with director Richard Shepard in the AMV television movie The Royale. He was cast as Taylor Donovan on the ABC sitcom Two of a Kind, alongside Mary-Kate and Ashley Olsen. In 1999, he originated the character Max Nickerson on the soap opera on CBS named Guiding Light. He left the show four months later to concentrate on his studies. After his high school graduation, he went back to his television career. He was given the role of Will Munson, a troubled youth on another CBS soap opera As the World Turns, which he played until 4th April 2008.

Soffer was nominated thrice in 2008, for the Daytime Emmy Award for Outstanding Younger Actor in a Drama Series due to his work on ATWT. He was also nominated in 2005 for a Soap Opera Digest Award for Outstanding Younger Lead Actor. He returned to his career in film and co-starred alongside Carly Schroeder in Gracie, a  Davis Guggenheim’s sports drama which is based on a true story. Soffer reprised his role on As the World Turns in the role of Will Munson. Additionally, he co-starred in the science fiction action thriller named In Time which aired in 2011 and from there, he has guest-starred on several television series like The Mentalist, CSI: Miami, and Rizzoli & Isles.

Soffer co-starred alongside Jordana Spiro in the medical drama The Mob Doctor in 2012 playing the role Nate Devlin. In the same year, he co-starred in the movie Jodi Arias: Dirty Little Secret as Travis Alexander. It was reported in June 2013, that he had joined the cast of the police procedural drama Chicago P.D. as Detective Jay Halsted. The character was introduced in season two premiere of Chicago Fire. On 8th January 2014, Chicago P.D. premiered and on 19th March 2014, season two was renewed.

Soffer appeared in season two premiere of the web series Talking Marriage with Ryan Bailey on 24th September 2014. He joined Doug Smith and Will Lowery on the podcast Beyond the Fairway on 16th November 2021 to discuss the similarities between golf and acting, how he got into the game and much more. It was announced on 30th August 2022 that the tenth season of Chicago PD would be the last season for him. Soffer made his last appearance on 5th October 2022, on the third episode. Variety announced on 20th October that he will be back to Chicago P.D. to work as a director. He directed the 16th episode called Deadlocked which aired on 22nd March 2023. This marked his debut as a director.
